There are so many ways today to improve your life. Here I’m mostly referring to your inner self. I’ve noticed that I need to go back to some tools I used to look at every day- my App 3 good things. And to write more regularly about 3 things that I should be grateful for. The brain is powerful and gratification is also such. Are you good at looking after yourself? I came across this great post Invest in you!. A lot of good advice. One of them is about blogging but also the importance of investing in you! From getting up early, exercising and reading. Scandinavian Fashion
Scandinavian fashion is everywhere. Maybe not so surprising as this is where I’m currently finding myself! But it truly is everywhere from your kitchen, living room to your wardrobe. Here is a sample of tops, skirts and a funky rucksack from Sandqvist. I have also started to like Samsoe and Samsoe. From tops to nice summery skirts. Another brand that I’ve seen around for many years is Filippa K. Also seem to be breaking into the sports clothes section. Something else on my list to try is also a product from Ole Henriksen. A danish skin cosmetician. They seem great!

Thursday inspiration!
Today is Thursday. Here in Denmark is a holiday day tomorrow, so for me it’s like a Friday. A long weekend with family and friends. Sometimes we forget what we have and how good things really are. To enjoy the now. Do you tend to be stuck in the past? Or worry about the future? It can be a challenge. I’m finding it more and more important to accept what’s in the past is there to stay. And you would not be where you are today without it. Learn to let go and focus more on the now. Enjoy the early morning, your coffee or tea. Savour it. Make the most of your trip into work or wherever you are going first thing in the day. Observe, take deep breathes. Life still is pretty amazing. Smile to other people. Smile from within. That generates strong energy around you and there is no doubt that it’s contagious. Love life even. Even in those hard and tough moments when it feels as if so much is working against you. Let the past be gone, love the now and look forward to your future! I so recommend. Have an amazing Thursday!!!
Focus, vision, goal and affirmation!
Focus this week is on achieving goals and delivering results. To actually complete what I’ve started. We all have to do lists- now it’s time to tick them off and ensure they are closed out.
Vision is more family, friends and fun towards the end of the week! Realise that stressful moments are temporarily. Remember to breath! Enjoy today.
Goal is my focus; to complete what’s been started!!!
Affirmation to “excel in all that I do, success comes easy to me”. A bold affirmation perhaps but why not?? Who says that we can’t achieve what we set out to achieve as long as we are clear and focused and plan. Make a plan!

Waffles in the making!
This weekend we’ve had many friends visiting. Something I have not used, made or eaten in years came back on the menu: waffles.
I don’t know if this is a Scandinavian food item but we’ve enjoyed them for breakfast brunch this weekend. I actually prefer to make my own batter as well.
I did waffles with egg & milk and also dairy and egg free ones.
Waffles:
- 50gr butter (dairy free if you prefer)
- 1 egg (can be left out)
- 3 dl flour
- 1 1/2 dl milk (oat milk or other alternatives)
- 1 tbs baking powder
- 1 tbs vanilla sugar
Mix all of these ingredients thoroughly then the trick is to add in a little bit of very cold water in this. Make sure though that the mix is quite thick (thicker than pancake batter). Then start heating your waffle maker, add butter/ dairy free and close it to ensure this ends up on both sides! Then add about a dl/ small cup of batter and close the waffle maker. Check it regularly and I used butter knives made of wood to check, poke and take them out with (see the photo below!).
We served these with cream, strawberry jam, freeze dried strawberries, blueberries, Nutella or maple syrup. Yes a crazy mix but so nice! I really recommend! I have also come across waffles served savoury with caviar, creme fraiche, finely chopped onion, different type of cheese etc. Maybe something to try next time? A fun way to start your day though and so far, a hit with everyone who have tried them! Enjoy…
