This weekend we’ve had many friends visiting. Something I have not used, made or eaten in years came back on the menu: waffles.
I don’t know if this is a Scandinavian food item but we’ve enjoyed them for breakfast brunch this weekend. I actually prefer to make my own batter as well.
I did waffles with egg & milk and also dairy and egg free ones.
Waffles:
- 50gr butter (dairy free if you prefer)
- 1 egg (can be left out)
- 3 dl flour
- 1 1/2 dl milk (oat milk or other alternatives)
- 1 tbs baking powder
- 1 tbs vanilla sugar
Mix all of these ingredients thoroughly then the trick is to add in a little bit of very cold water in this. Make sure though that the mix is quite thick (thicker than pancake batter). Then start heating your waffle maker, add butter/ dairy free and close it to ensure this ends up on both sides! Then add about a dl/ small cup of batter and close the waffle maker. Check it regularly and I used butter knives made of wood to check, poke and take them out with (see the photo below!).
We served these with cream, strawberry jam, freeze dried strawberries, blueberries, Nutella or maple syrup. Yes a crazy mix but so nice! I really recommend! I have also come across waffles served savoury with caviar, creme fraiche, finely chopped onion, different type of cheese etc. Maybe something to try next time? A fun way to start your day though and so far, a hit with everyone who have tried them! Enjoy…
