Yoga and recipe tips!

When you’re not really feeling 100% I really recommend this Yoga for concentration with Adriene. She really is so good at what she does!

I also tend to read some Swedish bloggers. There are quite a few there. One I do like is this one: Matplatsen with a lot of recommendations about food, cooking, clothes and so on. Yesterday I tried a simple but delicious dish I want to recommend.

Chicken cashew so easy and quick to do!

800 gr chicken (breast or thigh)

1 broccoli

2 carrots

1 red pepper


1 small bottle of oyster sauce

3 tbs brown sugar

1 1/2 dl water

Salt & pepper

Start by frying the chicken, then add the chopped vegetables and stir until lightly coloured. Add the oyster sauce, water and sugar and mix. Let it simmer 5-7 minutes. Check that the chicken is done!

You can of course add other vegetables such as red onion, mini corn, sugar snap peas etc. Serve with Jasmin rice. It is very tasty, quite healthy and quick to make!

Focus, vision, goal and affirmation!

What are you focusing on this week? For me it’s to stop worrying: you can’t change yesterday, but you can ruin today by worrying about tomorrow! How true isn’t that saying? I think a lot of us spend unnecessary time giving focus to wrong things such as unnecessary worries! Stop that right now!

My vision right now is walking barefoot on a warm beach, sand weeping through my toes and a nice cool breeze grabbing a hold of a few hair strands. My daughter playing in the sea and just creating beautiful memories together!

Goal right now is to take one thing at a time; slowly but surely reach my goals- I have a lot of them!!!

Affirmation; take deep breaths. When in stressful moments try the Lions breath! It really does miracles to your mind and soul. In the beginning, yes, you might feel a bit silly but it really works! So… deep breathes. Such a simple thing.

Another Friday week’s passing too quickly!

My intentions have been to post several blog posts this week. I just have not made the time. Life gets busy sometimes and that’s when it’s important to take a step back and ask yourself: what’s important in life?

Enjoy and appreciate the small things in your life: the ray of sunshine coming through the dirty windows, the spring flowers populating the grass, the different smells revealing spring being here, the tiny dogs roaming around without a leash owners following in their tiny paths… sunshine, day light, smiles, chatter. It is marvellous- really!

So this week my affirmation has been all along:

Say that out loud, take a deep breath and close your eyes… cause you do! I… recommend!

Friday inspiration!

Wow- another Friday. How great is that?!

The weeks go too fast. It’s already close to April and Q2?! Spring is close and almost here. Spring flowers are making their appearance. I have to admit at being extremely bad a recognising and naming flowers and plants. Something to work on perhaps? Have the most amazing of Fridays and sometimes it’s the small daily efforts that can give the biggest rewards! Focus, vision, goal and affirmation!

Focus can be one of many things. Right now it’s still to start and to complete what’s been started! Multitasking is a skill but I’m starting to think that it’s more efficient to do one thing at a time! And to see it through to the end.

Vision is to look back this week and having completed a lot of my “to do” things. The goal is to do this AND to maintain the work life balance. Even here in a liberal country such as Denmark, it’s a challenge. Personally I’m so used to just give work 110% all the time. Sometimes family life needs to take precedence. I’m blessed because that is more acceptable here- no doubt about that. 🙏🏻

Affirmation will be to keep “focused and remain calm- throughout”!!!
