This week’s challenge cook healthier food!

So this week, I challenge you to cook healthier food. To cook more from scratch and incorporate more vegetables and fruit in your diet. This is perfect timing, to be a bit healthier and mindful before all the festivities start.

I encourage you to do stir fries, to poach fish and or chicken, prepare delicious salads with some different type of vegetables in, stews and home made soups! I know it’s not always easy to prepare and to cook from scratch all the time. But this week, I truly encourage you to spend more time in the kitchen! Come on, do it- you know it makes sense!

  1. A choir member here as I am already a vegetarian. My favorite simple recipe is Roasted Red Pepper Hummus. It is so delicious, it needs nothing else but I love using it as a dip for a plate of veggies. I don’t know what is available where you are but I have no doubt you can create this anywhere.
    1 head of garlic (adjust for personal taste, I love garlic)
    1 large jar roasted red peppers
    2 jars, about three cans, chickpeas
    1 lemon or 2 limes juiced (I have a strong preference for lime)
    1 heaping tablespoon tahini
    Olive oil
    Salt

    I find if I put the garlic and salt in the processor together and pulse, it makes short work of mincing the garlic.then just add everything else, pulse till smooth and enjoy. I believe it is better to rest a few hours or overnight for the flavors to blend in. ENJOY!

  2. Most nights for dinner we have, as my man says, ‘meat and 100 veggies’.. Hahaha… 🙂
    We love vegetables and never tire of them simply steamed and covering our plate with a small piece of fish, chicken or red meat. Occasionally we love to have our ‘homemade’ lasagna – yes totally from scratch (except the ‘oven ready lasagna sheets). Add some brightly coloured greens like beans, broccoli and brussels sprouts (my man’s favourite) and there’s a healthy, hearty meal.
    The latest thing I am doing, eating wise, is eating only the amount of food I need. I used to eat whatever was on my plate (never a very large amount, but, sometimes too much). Now I’m happy to stop when I begin to feel I’ve had enough. If I get hungry later on, there’s always yoghurt, fruit or nuts for snacks.
    Did I say that I luv great food? I do… 🙂

    1. Sounds amazing! I think those sounds like great meals- protein and vegetables. I’ve always eaten more or less what I fancy… sometimes more vegetables and fruit is better for me however. I also love food and am not a believer in diets or restrictions- just striving to find the “forever lasting working balance”… thank you for sharing 😌

  3. Love this week’s challenge! 🙂 I can feel my body needs some love and detox 🙂 On this autumny days I am in really need of nourishing and warm soups. One of my favorite ones is “Cream of Broccoli Soup” from “The Hungy Hottie” Cookbook by Cynthia Pasquella. And it is very easy!

    Ingredients:
    6 c vegetable broth (for me it tastes better when using Knorr’s Fond du Chef rather than the cube ones)
    2 medium Russet potatoes, chopped
    1 large head broccoli, chopped
    1 tbsp olive oil
    1 medium onion, chopped
    ½ tsp dried basil
    salt and pepper, to taste

    Directions:

    1. Sauté onion with olive oil in a large pot until tender.
    2. Add broth and potatoes and bring to a boil. Reduce heat and cover until tender,
    about 10 minutes.
    3. Meanwhile, steam the broccoli until it turns bright green.
    4. Add broccoli and basil to pot and blend with immersion blender until smooth.
    5. Add salt and pepper to taste.
