Instead of chucking away ripe bananas, use them to make tasty banana bread! Delicious and not too sweet- and so easy if you use a bread maker. One of my challenges is to use what I already have! So instead of hiding constantly in the cupboard, my bread maker is starting to make the occasional appearance in my kitchen! I’m honoured that this shy guest is starting to come out more and more! And the bananas are well used.
How to- if using a bread maker, in this order:
100ml butter/ alternative
2 eggs
2tbs of milk/ alternative
2 ripe mashed up bananas
2tbs of sugar
Hint of vanilla sugar (if you have?!)
3 dl of easy flour/ alternative
3tbs of baking powder
Then select the baking programme (option 2 on my bread maker) then… go and do something else for 2 hours!
Once complete, take out to cool, cut up some slices and enjoy with a nice cup of tea or coffee. Or why not, with an extra cold glass of milk!
This is easy to freeze as well, ideally in individual slices. I also recommend to use a bit of vanilla sugar. I’m not sure this exists outside of the Nordics though? It’s great!
